Right-click any ribbon tab and select Close from the shortcut menu.

The second step in creating the classic AutoCAD interface is displaying the AutoCAD menu bar above the toolbar. Enable the display of the menu bar as in the old classic view AutoCAD can be in several ways:

Which AutoCAD interface to use
Until now, there has been a debate about which of the two AutoCAD interfaces is better. I suggest working with two interfaces at least for a while, and then choose one or another interface. My choice was based on the user interface of AutoCAD, based on the menu bar and toolbars, toolbars.
At the time of writing, I use AutoCAD 2017 and uniquely developers of this system, no longer support the classic view of AutoCAD. New classical toolbars are not added or recycled, although new commands and system variables appear with each new version of AutoCAD, old ones are being modified. Take the same projection views used in the AutoCAD simulation - no classical panel has been added.
